Barbequed chicken breasts with yams in appricot sauce

Serves: 4
Cooking time: 30 minutes

Ingredients:
2 pouches Perfectaste Yams in Apricot Sauce
4 boneless skinless chicken breasts
100g mesculin salad mix
20ml balsamic vinegar
20ml olive oil
2 bunches spring onions

  • Method:
  • Lightly brush the chicken with some oil, season with salt and pepper. Place into a hot skillet pan or onto open bars on the BBQ and cook.
  • While the chicken is cooking cut the capsicums into quarters removing the seeds, cut the green off the spring onions leaving the base, which look like little leeks. Lightly coat these in oil and put onto the BBQ to lightly cook and leave a char grilled effect. Remove and set aside for service
  • Put the mesuclin salad into a bowl and toss through the vinegar and olive oil.
  • Prepare the yams according to the packaging.
  • When the chicken is cooked display your meals

Note: when in season asparagus is a nice alternative to spring onions.
