Oven baked fish with yams in tomato sauce
Cooking time: 15 minutes
4 fish fillets (ask your fish supplier for fish that will hold its shape when
2 lemons juiced
2 pouches Perfectaste Yams in Tomato Sauce
4 vine tomatoes (medium size)
50g micro greens
- Pre heat oven to 200oc
- Line a baking tray with baking paper, place the fish on tray and season
with salt and pepper and drizzle with lemon juice. Bake in a hot oven for
approx 15 minutes, depending on the size and thickness of the fish fillets
- Pour little olive oil on the whole tomato and sprinkle lightly with sea
salt and cracked black pepper. Lightly grill in the oven just enough to give
a little colour on top.
- Prepare the yams according to the packet.
- For presentation of each plate put some yams and sauce in the centre of
a plate, carefully place the fish on top, and then put a tomato on the fish,
put a little of the micro greens to the side and garnish with your choice
of herb, dill, fennel or Italian parsley are nice with fish.
