Earth Gem omelette
250 gms Earth Gems
2 tlbs olive oil
1 onion, finely diced
1 clove garlic, crushed
1 tsp paprika
2 large ripe tomatoes, peeled and chopped
? tsp baking powder
p tsp salt
Basil leaves to garnish.
Cook the Earth Gems in boiling salted water for about 4 minutes or until tender.
Meanwhile heat the oil in a 23cm frying pan over medium heat. Add the onion and garlic stirring occasionally until softened. Stir in the paprika and tomatoes. Cook for 2 minutes. Drain the Earth Gems and stir into the onion and tomato combination. Gently cook for 5 minutes until the Earth Gems have absorbed some of the flavour.
Meanwhile in a large bowl, beat the eggs stirring in the baking powder and salt. Pour the eggs over the gems, cover and cook over low heat for 8-10 minutes until almost set. Finish off by grilling the top under a preheated grill for 2-3 minutes.
Serve warm garnished with plenty of freshly torn basil leaves.
