Earth gem, chorizo & sour cream salad
500 gms Earth Gems
200 gms chorizo sausages sliced
2-3 tlbs sour cream
1 tlbs dijon mustard
1 tlbs white wine vinegar
2 tlbs roughly chopped flat leaf parsley
Boil the Earth Gems until tender, drain and set aside. Pan fry the
sliced chorizo until just cooked. Take off the heat and stir in
the Earth Gems with the remaining ingredients.
Toss together and season to taste with salt and freshly ground black
pepper. Serve warm.
Note: bacon or other flavoured spicy sausages can
be substituted for chorizo.
